Before you start, write fortunes on small strips of paper for enclosing in cookies. Stir together:

1/4 c. sifted cake flour
2 tbsp. sugar
1 tbsp. cornstarch
Dash salt

Add:

2 tbsp. cooking oil
1 egg white

Stir until mixture is smooth. Add 1 tablespoons water - mix thoroughly. Make 1 cookie at a time. On lightly greased skillet or griddle, pour 1 tablespoon of the batter; spread to 3 1/2 inch circle. Cook over low heat until lightly browned, about 4 minutes. Turn with spatula; cook 1 minute more. Working quickly, place cookie on pot holder; put fortune in center. Fold cookie in half, then fold again over edge of bowl. Place cookies in muffin pan to cool. Makes 8.
