DELICIOUS CARAMEL PIE 
This is really a delicious flavored pie and one of my favorites!

5 tbsp. (2/3 stick) butter
1 cup brown sugar
2 eggs yolks
2 rounded tbsp. cornstarch
2 cups milk
1 baked pie shell

Blend butter with brown sugar and let it boil up on low heat, about 1 minute, stirring all the time. Allow to stand on the stove with heat turned off while you prepare the rest of the pie.

Beat egg yolks and mix cornstarch with milk. Mix in beaten egg yolks. Pour this over the brown sugar/butter mixture which will be rather hard.

Cook, stirring constantly until mixture blends together and boils to thicken. Pour into baked pie shell.

MERINGUE TOPPING:

2 egg whites
1/4 cup sugar

Beat egg whites with sugar until mixture stands in peaks and place on top of pie.

Bake in preheated 400°F oven until golden brown.
