PICNIC CASSEROLE 
6 med. potatoes, sliced
1 lb. ground beef
2 tbsp. butter
4 med. onions, sliced
2 sweet peppers, sliced (may omit, or use carrots)
2 (8 oz.) cans tomato sauce (or canned tomatoes)
1 tsp. salt
1/8 tsp. pepper
1/2 tsp. sugar

Parboil potatoes in boiling, salted water for 2-4 minutes. Drain and reserve the water. Brown the beef in butter. Add onions and peppers and seasonings; saute for 5 minutes. Add the tomato sauce and simmer for 10 minutes.

Alternately place potatoes and meat sauce in large casserole until all ingredients are used.

Pour in enough of the potato water to barely come to the top of the filled casserole. Bake uncovered in 375 degree oven for 1 hour.
