CORN FRITTERS 
1 1/2 c. all-purpose flour
1 tsp. baking powder
1 1/2 tsp. salt
2 eggs, beaten
1/2 c. milk
2 c. cut fresh corn, cooked, or 1 (No. 2) can cut corn
Deep fat for frying

Sift flour; measure and resift with baking powder and salt. Combine beaten eggs and milk, mixing well. Add flour to mixture all at once and stir until smooth. Fold in well-drained corn.

Drop from a teaspoon into deep fat heated to 375 degrees and fry until golden brown on all sides. Lift out with slotted spoon and drain for a minute or two on paper toweling. Serve hot with syrup if desired. Yield: 5 servings.
