EGGPLANT FRITTERS 
1 c. all-purpose flour
1 1/2 tsp. baking powder
1/3 c. sugar
1 c. milk
1 egg
1 tsp. vanilla
1 med. eggplant, peeled & cubed

Boil eggplant until tender; drain. Make a batter and blend well with electric mixer. Drop by spoonfuls in a little hot oil and fry until golden brown on each side. Drain on paper towels. Makes about a dozen fritters.
