POTATO CASSEROLE 
14 sm. red potatoes, with skins
1 lb. Velveeta
1 sm. jar pimento
2 tbsp. parsley
1/4 c. melted butter
5 slices bread

OPTIONAL:

1/2 c. onions, minced
1/2 c. chopped ham
8 slices cooked bacon
1/2 c. chopped green pepper

Toast bread and cube. Boil and cube potatoes and place into baking dish. Cut Velveeta into cubes and scatter over potatoes. Add parsley, pimento, salt and pepper to taste. Add any optional ingredients. Scatter bread cubes over top. Drizzle melted butter over top. Bake at 350 degrees until bubbly. 8 large servings.
