DEEP-DISH APPLE PIE 
Pastry for a 9 inch single crust pie
10 c. sliced, peeled apples
1 c. white sugar
1 tbsp. cornstarch (if apples are very juicy)
1/2 tsp. cinnamon
1/2 tsp. nutmeg
Dash of salt
2 tbsp. fresh lemon juice
3 tbsp. butter

Place apples in a deep dish buttered baking dish (3 inches deep). Mix sugar, cornstarch, cinnamon, nutmeg, and salt; sprinkle over apples. Sprinkle with lemon juice, dot with butter.

Roll out dough on a lightly floured surface to fit top of deep dish with a 1 inch overhang. Crimp edges. Cut a vent in center of pastry. Bake at 400 degrees for 45 to 60 minutes or until apples are tender and juices are bubbling. The crust will be golden brown. Remove and cool on a wire rack. Serves 8 to 10.
