CHICKEN AND VEGETABLE DINNER 
1/2 lb. sm. white onions, peeled
2 1/2 lbs. frying chicken pieces
1 env. Shake 'n Bake Seasoned Coating Mix for Chicken
4 med. potatoes, peeled and cut into 1/2 inch slices
1/4 c. butter, melted

Cook onions in boiling salted water 10 minutes; drain. Coat chicken with seasoned coating mix as directed on package. Arrange in single layer in ungreased shallow baking pan.

Toss potatoes and onions in butter until lightly coated. Place in baking pan with chicken. I arrange potato slices between chicken pieces and around perimeter of pan.

Sprinkle remaining seasoned coating mix over potatoes and onions. Bake at 400 degrees for 40 to 50 minutes, or until chicken and vegetables are tender.
