PIONEER POTATO CANDY 
1 c. warm unseasoned mashed potatoes
1/2 tsp. salt
2 tsp. vanilla
2 lb. sifted powdered sugar

Combine potatoes, salt, and vanilla in a 4 quart mixing bowl. Sift powdered sugar over potatoes stirring and adding sugar 1 cup at a time. When it becomes the consistency of stiff dough, knead until you can roll it out on wax paper. When it is rolled out, spread peanut butter over the candy. Then roll up like jelly roll. Wrap in Saran paper and chill until you can slice in small slices. Wrap in Saran Wrap and store in airtight container.
