ORANGE BAKED FISH 
1 1/2 lb. fish fillets, fresh or frozen
1/3 c. melted butter or cooking oil
3 1/2 tbsp. orange juice
4 tsp. grated orange rind
1 1/4 c. finely crushed bacon-flavored crackers
1 tsp. paprika
1/2 tsp. seasoned salt
Orange slices (garnish)

Thaw fish, if frozen. Skin fillets; cut into serving-size portions. Combine butter, juice, and orange rind. Mix crackers, paprika, and salt. Dip fish in butter mixture and roll in cracker mixture. Place fish in a single layer in a well-greased, 1 1/2 quart shallow casserole.

Pour remaining butter mixture over fish. Bake at 450 degrees for 10 to 12 minutes or until fish flakes easily when tested with a fork. Garnish with orange slices. Makes 4 servings.
