APPLE SURPRISE 
4 c. flour
4 tbsp. sugar
1/2 tsp. salt
1 c. soft butter
1/2 c. sour cream
4 egg yolks

FILLING:

5 tbsp. bread crumbs
3 lb. peeled, cored and grated apples
1 c. sugar
1/2 tsp. cinnamon

Mix pastry ingredients as listed. Chill about 30 minutes. Roll out half of dough to like a cookie sheet. Sprinkle with bread crumbs. Then apples mixed with sugar and cinnamon. Cover with remaining pastry. Brush top with unbeaten egg whites, then sprinkle 2 tablespoons sugar. Bake at 375 degrees for 20-30 minutes or until top is golden brown. When cool, cut into squares.
