WELSH BEEF STEW 
2 lb. beef stew meat
1 c. celery pieces
3 med. potatoes, quartered
2 tsp. salt
12 oz. can tomato juice
1 chopped onion
6 carrots, cut into chunks
4 tbsp. minute tapioca
1 tbsp. sugar

In large casserole put stew meat, onion, celery, carrots and potatoes. Mix tapioca, salt, sugar and tomato juice and pour over meat and vegetables. Cover tightly with lid or foil. Bake at 250 degrees for 4 hours. May omit potatoes and serve over baking powder biscuits for a change, using more carrots instead to replace potatoes.
