RAISED DOUGHNUTS 
3/4 c. milk
1/3 c. sugar
1 tsp. salt
1 pkg. yeast
1/4 c. warm water
4 1/4 c. flour
1 tsp. nutmeg
1/3 c. vegetable oil
2 eggs
Oil for frying

Combine milk, sugar and salt. Heat to lukewarm. Dissolve yeast in 1/4 cup warm water. Combine milk and yeast mixes. Add 2 cups of flour and nutmeg. Beat well. Add oil and beat again, add eggs, mixing well. Add remaining flour. Turn out on a floured board and knead for a few minutes.

Place in a greased bowl, turning to grease top. Let rise until double. Turn out on a floured board and roll or flatten dough to 1/3 inch thick. Cut with a doughnut cutter. Let cut doughnuts rise until very light, 30 to 40 minutes. Leave uncovered so a crust will form. Pick up doughnuts with a wide spatula and slide into hot oil about 375 degrees. Fry until golden brown, turning once. Makes about 3 dozen. Be very careful of hot oil - spatters. Shake with sugar and cinnamon while still warm.
