CHILLIES'S CASSEROLE 
1 lb. ground beef
1/2 c. chopped onion
7 oz. can green chillies (drained)
6 oz. shredded sharp Cheddar cheese
1 1/2 c. milk
4 beaten eggs
1/4 c. flour
1/2 tsp. salt
Tabasco and pepper to taste

Brown beef and onion, drain fat. Add salt and pepper. Halve chillies crosswise and remove seeds. Place half of the chillies in 9x9x2 inch baking pan. Sprinkle with cheese. Top with meat mixture. Arrange remaining chillies over meat.

Combine remaining ingredients and beat until smooth. Pour over chillies. Bake in 350 degree oven for 45 minutes or until knife comes out clean. Cool 5 minutes before serving.
