APPLESAUCE 
12 tart apples
5 tbsp. sugar
1/2 tsp. salt

Wash apples, pare and core. Quarter then and put in large saucepan. Half cover with cold water. Bring to a boil. Cover, reduce heat and let simmer until apples are tender. Stir in sugar and salt. Cook 5 minutes more. Mash with a spoon. If desired, add a little lemon juice, cinnamon or nutmeg. Chill.
