ORANGE-ONION SALAD 
Servings: About 4. Preparation time: About 15 minutes. Chilling time: About 45 minutes.

Lettuce leaves
4 oranges, peeled and cut into 1/4 inch slices
1 sm. red onion, very thinly sliced
Classic Vinaigrette (recipe follows)

Line 4 salad plates with lettuce. Alternately overlap orange and onion slices. Cover and chill about 45 minutes. Serve with Classic Vinaigrette.

CLASSIC VINAIGRETTE:

2/3 c. vegetable oil
1/4 c. red wine vinegar or fresh lemon juice
1/2 clove garlic, minced
1 tsp. salt
1/2 tsp. dried basil
1/2 tsp. dry mustard
1/4 tsp. dried tarragon
1/4 tsp. ground pepper

In small bowl or covered jar, whisk or shake all ingredients until well blended. Cover and chill until ready to serve. Makes about 1 cup.
