HOT MONTEREY SALAD 
1 lb. ground beef
1 tbsp. butter
1/4 tsp. hot pepper sauce
1 c. mayonnaise
2 c. diced celery
1 c. chopped onion
1 clove garlic, minced
2 tsp. salt
1 tbsp. lemon juice
3 c. cooked rice
1 c. chopped green pepper
1 c. crushed tortilla or corn chips
3 med. tomatoes, cut in wedges
(Chopped marinated artichoke hearts, optional)

Cook meat and garlic in butter until browned. Add salt, pepper sauce and lemon juice to mayonnaise. Stir into meat mixture with remaining ingredients except tortilla chips. Pour mixture into 2-quart casserole. Top with chips and bake at 375°F for 30 minutes.

Really tasty but waaaay too much rice for me. A cup and a half or maybe two would have been much better.
