SCOTTISH SHORTBREAD 
1 c. butter
1/4 tsp. salt
2 c. sifted flour
3/4 c. sifted confectioners' sugar

Using mixer at medium speed, beat butter, sugar and salt 2 minutes. At low speed blend in flour until a smooth dough forms. Spray large shortbread mold with cooking spray. Press dough into mold. Bake in 325 degree oven for 45 minutes. Cool 5 minutes. Remove from mold; cool on rack. Makes 6 to 8 servings.
