TOMATO-ZUCCHINI CASSEROLE 
2 sm. zucchini, sliced
1 med. onion, sliced
2 sm. tomatoes, sliced
1 c. shredded cheddar cheese
Seasoned croutons
Salt and pepper
Olive oil

Grease casserole dish well with olive oil. Layer zucchini, onion and tomato in casserole, adding salt and pepper to taste. Place grated cheese and croutons on top. Cover and bake at 350 degrees for about 45 minutes or until vegetables are tender.
