AEBLESKIVER 
3 eggs
2 tbsp. sugar
1/4 tsp. salt
2 c. flour
1 tsp. baking soda
1 tsp. baking powder
2 c. buttermilk
Shortening

Beat eggs; add sugar, salt and dry ingredients alternately with buttermilk. Beat until smooth. Bake in a heated Ebleskiver pan with about 1/4 teaspoon shortening melted in each cup. Fill 2/3 full and bake until edges are brown and batter bubbles. Turn over carefully with a fork and bake on other side. Place in a warm oven until rest are baked. This recipe is a good alternative to pancakes.
