BASQUE POTATOES 
1/2 c. finely chopped onion
1/2 c. chopped celery
1/2 c. shredded carrots
4 c. potatoes, cubed
2 bouillon cubes, chicken
1/2 tsp. salt or season salt
Sprinkle of garlic powder to taste
2 tbsp. butter or Molly McButter
1 1/2 to 2 c. water

Mix all ingredients in microwave dish. Cover and cook on high for 12 minutes, stir 2-3 times during cooking. Check for doneness, cook longer if needed. Let stand 5 minutes, will continue cooking while standing. Can also be cooked on top of stove, bringing to boil and simmer for 20 minutes or until broth thickens. Sprinkle with parsley. Serves 4-6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
