DIJON SPINACH SALAD | |
1 c. salad oil 1 tbsp. powdered sugar 1 tsp. paprika 1/4 c. red wine vinegar 1 1/2 tsp. dry mustard or 2 tsp. prepared Dijon mustard 2 tsp. salt 1 tsp. pepper 1 pkg. fresh spinach, stems removed, washed 4 hard boiled eggs, sliced 1/2 lb. bacon, cooked 2 avocados, sliced 1/2 red onion, sliced Combine in jar: oil, sugar, paprika, vinegar, mustard, salt, pepper. Shake and refrigerate. (Can be made ahead.) In large salad bowl, put spinach, eggs, bacon, onion and avocados. Twenty minutes before serving, add dressing and toss. This recipe serves 12. Great for parties. |
