APPLESAUCE SOUFFLE 
1 1/4 c. unsweetened applesauce
1/2 tsp. cinnamon
2 tsp. raisins
3 egg whites

Preheat oven to 350 degrees. Blend applesauce and cinnamon. Spoon 1 tablespoon of applesauce into bottom of each of 4 (6 ounce) cups. Top with raisins. Beat egg whites until stiff but not dry. Fold half into remaining applesauce and blend well. Fold remaining whites into applesauce very gently. Spoon into cups and sprinkle tops with cinnamon. Bake about 15 to 20 minutes until puffed and brown. Serve immediately. Serves 4.
