LITE AND ZESTY CHICKEN AND RICE 
4 chicken breast, cutlets
2/3 c. uncooked rice
1/2 c. Italian dressing
16 oz. bag frozen vegetables (broccoli, carrots, water chestnuts)
1 can Durkee onion rings
1 3/4 c. chicken broth
Durkee Italian seasoning

Place chicken in baking dish, pour Italian dressing on top. Bake uncovered at 400 degrees for 20 minutes. Remove. Add rice, vegetables, chicken broth and 1/2 can of onion rings around the chicken. Sprinkle with Durkee Italian seasoning.

Bake uncovered 25 minutes. Remove and add rest of onion rings. Bake 5 more minutes. Enjoy.
