BAKED EGGPLANT 
1 eggplant
2 tbsp. butter
1 sm. onion, chopped fine
1/4 c. bread crumbs
1 egg yolk
1/4 lb. Parmesan cheese
Salt & pepper

Boil eggplant until tender, but not soft. Cut in halves lengthwise. Take out insides and mash with butter, onion, crumbs, egg, cheese, salt, and pepper. Refill shells. Place in pan in oven. Baste with butter and brown in 350 degree oven for 40 minutes.
