MEXICAN CORNBREAD CASSEROLE | |
1 lb. ground beef 1/4 c. chopped onion 2 eggs, beaten 1 (1 lb.) can cream style corn 2/3 c. milk 1 (6 1/2 oz.) env. cornbread mix 4 slices American cheese 1 tsp. jalapeno Preheat oven to 425 degrees. Brown beef until crumbly, draining off excess fat. Add onions. Combine eggs, 1 cup corn, milk, jalapenos, and add to cornbread mix. Stir just until dry ingredients are moistened. Pour half of cornbread batter into greased 9" square pan. Top with beef mixture, cheese slices, remaining corn and pour other half of cornbread batter on top. Bake for 25 to 30 minutes. Makes 6 servings. |
