BANANA NUT BREAD 
2/3 c. shortening
1 c. sugar
4 eggs
2 tsp. vanilla
3 1/2 c. sifted all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 1/2 c. mashed ripe bananas
1 c. chopped walnuts (optional)

Cream together shortening and sugar; add eggs, vanilla and beat well. Sift together dry ingredients; add to creamed mixture. Add bananas and nuts. Pour into 2 (9 x 5 x 3 inch) loaf pans. Bake at 350 degrees for 45 to 50 minutes. Remove from pans and cover with towel for 10 to 15 minutes.
