BANANA MINCEMEAT NUT BREAD 
2 1/2 c. flour
1 tsp. salt
1 tbsp. baking soda
1 c. salad oil
2 c. sugar
4 eggs
2 1/2 c. mashed bananas
1 c. mincemeat
1/2 c. chopped nuts

Preheat oven to 325 degrees. Grease and flour two 8 1/2 x 4 1/2 x 2 1/2 inch loaf pans. Sift flour, salt, and baking soda. In a large mixing bowl, combine oil and sugar; add eggs and mix well.

Blend in bananas, mincemeat, and nuts. Add flour gradually to creamed mixture. Pour into prepared pan and bake 1 hour or until done. Makes 2 loaves.
