SWEET POTATO CASSEROLE 
4 c. cooked sweet potatoes
2 c. sugar
1 c. evaporated milk
3 eggs, beaten
1/2 c. butter
1 tsp. cinnamon
1 (3 oz.) pkg. instant lemon pudding

Mash potatoes that have been cooked in their jackets until tender. Mix all other ingredients into the creamed sweet potatoes and bake at 325 degrees for 1 hour. Marshmallows may be added if desired.
