SMOTHERED BURRITO CASSEROLE
(EASY)
 
1 lb. ground beef
1 (15 oz.) can refried beans
1 pkg. taco seasoning mix
1 (8 oz.) pkg. Spanish rice mix
1/2 (2 lb.) block Velveeta cheese, cut into cubes
1 (10 oz.) can Rotel tomatoes, drained
flour tortilla shells
dairy sour cream (optional)

Brown hamburger, drain off excess fat. Add taco seasoning mix to hamburger per package directions. Add refried beans and heat until bubbly.

In separate pan, prepare Spanish rice according to package directions.

In microwaveable dish, melt the Velveeta cheese and can of Rotel.

Note: I cover the cheese mixture with Saran Wrap to avoid burning cheese to sides of dish.

When Spanish rice is cooked, spoon it into bottom of casserole dish.

Make burritos by spooning beef mixture into a tortilla, then lay each one opening side down on top of rice. Pour cheese mixture over all other ingredients. Line them up on baking sheet.

Bake at 350°F for about 15 to 20 minutes, until cheese is bubbly.

May top with dairy sour cream, if desired.
