VEGGIE STUFFED PEPPERS 
3 green peppers
3/4 c. cooked brown rice
1/4 c. cashew
1 carrot, grated
3/4 c. cheddar cheese, grated

1. Preheat oven to 350 degrees.

2. Parboil peppers.

3. Mix together remaining ingredients and stuff peppers. Bake 25 minutes.
