1 (9") unbaked pie shell
3 med. eggs
3/4 c. sugar (half brown & half white)
1 c. undiluted evaporated milk
1/4 tsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. ground ginger
1/2 tsp. nutmeg
1/4 c. soft butter
1 1/2 c. cooked mashed sweet potatoes

Heat oven to 450 degrees and prepare pie shell. Beat eggs well with rotary beater. Add sugars, milk, ginger, cinnamon, nutmeg and salt; beat until blended. Mix in potatoes and butter.

Pour into pie shell and bake 15 minutes. Reduce oven temperature to 325 degrees and continue baking 30 minutes; or longer until filling is set. Serves 8.
