SOUR CREAM SUBSTITUTE 
1 c. evaporated milk
1 tbsp. vinegar

Milk and vinegar should be at room temperature. Mix ingredients and then let stand until mixture thickens and clabbers. Can be used in many of your recipes calling for sour cream.
