ICE CREAM DELIGHT 
1/2 gallon vanilla ice cream
2 stacks Ritz crackers
1/4 c. melted butter
2 sm. pkg. instant pudding (either vanilla, coconut cream or banana)
9 oz. Cool Whip

Soften ice cream; crush Ritz crackers. Mix crackers with melted butter. Spread 3/4 of this mixture in bottom of 9 x 13 inch dish. Mix ice cream, add pudding. Pour over top of crackers. Refrigerate for 1 hour then spread Cool Whip on top of ice cream mixture. Sprinkle remaining crackers on top.
