BASIC COFFEE CAKE 
4 eggs
1 c. oil (vegetable or corn)
2 c. sugar

Beat together until light.

3 c. flour
3 tsp. baking powder

Sift. Add to above alternately with:

3/4 c. orange juice
1 1/2 tsp. vanilla extract or orange extract

Mix well. Pour into light greased 9 x 13 inch pan or tube pan. Bake at 350 degrees for approximately 3/4 hour to 1 hour.

1. Variation: Pour 1/2 into pan, cover with a mix of cinnamon, sugar and raisins, then pour remaining batter over this.

2. Or: Substitute cream soda for juice plus 1/2 teaspoon almond extract also using vanilla extract (no raisin mix). Thin icing on top.

3. Or: Pour 3/4 into pan - into remaining batter add 2 or 3 tablespoons cocoa plus 1/2 teaspoon rum extract. Mix well, then pour over batter and with tip of sharp knife, swirl to marbelize.
