HASH BROWN POTATO CASSEROLE 
2 lb. bag frozen hash brown potatoes, thawed or prepare your own
2 c. onion, diced
16 oz. carton sour cream
1 can cream of chicken soup, undiluted
1/2 c. butter, melted
8 oz. cheddar cheese, grated

Mix ingredients in large bowl. Season with salt and pepper. Pour in 9 x 13 inch casserole dish. Top with crushed potato chips (last 10 minutes). Bake at 350 degrees for 1 hour or until done.
