LINGUINE AND PEPPERS 
2 tbsp. olive oil
3 tbsp. butter
1 sm. onion, chopped
1 clove garlic, minced
4 med. green or red peppers, diced
1 tsp. salt
1 c. chicken or vegetable broth
Black pepper and grated cheese to taste

Saute onion and garlic in oil and butter. Add peppers. Simmer 10 minutes. Add salt, broth, and black pepper. Simmer over low heat for 15 minutes. Pour over cooked linguine. Sprinkle with grated cheese.
