PLANTATION DRESSING 
Preparation time: 10 minutes. Chilling time: overnight. Yields: 1 pint.

1 c. mayonnaise
1 c. buttermilk
1 clove garlic, minced or pressed
1 tbsp. sliced green onion
1 tbsp. minced fresh parsley
1 tsp. dried tarragon leaves
Salt & pepper, to taste

1. In food processor or blender, combine the mayonnaise, buttermilk, garlic, green onion, parsley and tarragon leaves. Process until smooth.

2. Taste. Add salt and pepper.

3. Transfer to jar. Refrigerate overnight before using.

BLUE CHEESE DRESSING:

Add 1 package (4 ounces) crumbled blue cheese to the dressing after processing. Taste. Add salt and pepper. This dressing is also good as a sauce on top of pan-broiled hamburgers.

BUTTERMILK CAESAR DRESSING:

Use 2 tablespoons chopped or sliced onion and add 1 cup grated Parmesan cheese to the mixture before processing in blender.

Good served with: Simple mixed green salad, fresh fruit salads or offer as a dressing with a chef's salad.

HEALTH NOTE: To reduce calories, use reduced-calorie mayonnaise.
