1 c. butter or shortening
1 c. white sugar
1 c. brown sugar
3 eggs
1 c. peanut butter
2 1/2 c. flour
1 tsp. vanilla
1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 c. quick oatmeal

Mix in order given. Roll into balls, place on ungreased cookie sheet 2 inches apart.

Bake at 350°F degrees - about 8-12 minutes, being careful not to overbake or they will be dry. Baking time depends upon how large the cookies you've made are and your oven. Watch carefully during the last few minutes of baking. To keep the undersides from browning too much, use parchment paper or silicone baking sheet liners.

Makes about 5 dozen cookies.
