“BACARDI RUM CAKE” IS IN:

BACARDI RUM CAKE 
1 cup chopped pecans or walnuts
1 pkg. yellow cake mix
1 (3 oz.) pkg. instant vanilla pudding
4 eggs
1/2 cup cold water
1/2 cup Wesson oil
1/2 cup Bacardi dark rum (80 proof)

Preheat oven to 325°F. Grease and flour 10-inch tube pan or 12 cup Bundt cake pan.

Sprinkle nuts over bottom of pan. Mix all ingredients together and pour over nuts. Bake at 325°F for 1 hour. Cool.

Invert on serving plate. Prick top. Drizzle smooth glaze evenly over top and sides. Allow cake to absorb glaze. Repeat until all glaze is used.

GLAZE:

1/2 cup (1 stick) butter
1/4 cup water
1 cup granulated sugar
1/2 cup Bacardi dark rum

Melt butter in saucepan. Stir in water and sugar. Boil 5 minutes, stirring constantly. Remove from heat and stir in rum.

Optional: Decorate with whole maraschino cherries and border of sugar frosting or whipped cream. Serve with seedless grapes dusted with powdered sugar.

I have made this recipe many times over the years I used Captain Morgan's spiced rum also. There is never any left - its always a big hit.

Never seen this posted, but after my Rum cake cools for about 15 minutes, I make my glaze and pour it in the pan and let the cake just soak up all that glaze.

I use the Bacardi Recipe for Rum Cake: make mine with Spice Cake Mix. Also, who needs water? I use the Dark Rum as stated and also substitute Dark Rum for the amount of water for the recipe. Makes a killer rum cake. Rich and tasty: will have to try it with Spiced Rum. (Not for a child's birthday party!)

Giggling ~ I gave this 5 stars even tho I haven't made it... but sure plan to!! Soooo the box cake mix size has changed since the recipe was posted?? Can you share. if buying the second cake mix.... how much needs to be added ~~ what a crime... but am sure 'someone' is making xtra $... I sure need to buy a mixer!! And can't wait to make this.... I'd like to make several.... love the rum gig... how about Frangelica... thanks everyone! Please share if there are any other important things for me to keep in mind when cooking?
