“BACARDI RUM CAKE” IS IN:
NEXT RECIPE:  BANANA NUT CAKE

BACARDI RUM CAKE 
1 cup chopped pecans or walnuts
1 pkg. yellow cake mix
1 (3 oz.) pkg. instant vanilla pudding
4 eggs
1/2 cup cold water
1/2 cup Wesson oil
1/2 cup Bacardi dark rum (80 proof)

Preheat oven to 325°F. Grease and flour 10-inch tube pan or 12 cup Bundt cake pan.

Sprinkle nuts over bottom of pan. Mix all ingredients together and pour over nuts. Bake at 325°F for 1 hour. Cool.

Invert on serving plate. Prick top. Drizzle smooth glaze evenly over top and sides. Allow cake to absorb glaze. Repeat until all glaze is used.

GLAZE:

1/2 cup (1 stick) butter
1/4 cup water
1 cup granulated sugar
1/2 cup Bacardi dark rum

Melt butter in saucepan. Stir in water and sugar. Boil 5 minutes, stirring constantly. Remove from heat and stir in rum.

Optional: Decorate with whole maraschino cherries and border of sugar frosting or whipped cream. Serve with seedless grapes dusted with powdered sugar.

I too have made this cake for years, and I've made it with several different types of rums: Captain Morgan spiced, flavored Cruzan rums, Overproof Jamaican Rum and of course, Bacardi or whatever I happen to have around. It is always a winner.

I have been making this cake for over 15 years. A couple of years ago I noticed that it was not coming out the same as in the past. It tasted fine but just did not look right . Well the problem is that they have reduced the size of the cake mix and it is smaller. The recipe was written for when the mix was in a larger quantity. To solve the problem I added an additional 1/3 cup of cake mix.

I make this cake during the holiday. Its always a hit. After baking the cake and preparing the glaze. I add some extra rum on the bottom of a tin pan, lay the cake in the pan, then pour the glaze over the cake and place a lid over the pan. The cake absorbs all the glaze and it remains moist for a longer period of time. I repeat this process for three days until I get ready to serve the cake.

I make this every Christmas for my father-in-law, using sugar free chocolate cake mix and pudding and Captain Morgan spiced rum. For the glaze, I use sugar free frosting from a can mixed with rum. Everybody loves it!
