HOME MADE BEEF STICK 
5 lbs. hamburger (not too lean)
5 tsp. Mortons Tender-Quick Salt
2 1/2 tsp. mustard seed
2 1/2 tsp. garlic salt
2 1/2 tsp. cracked black peppercorn
1 tsp. hickory smoked salt

Mix well, put in a bowl and refrigerate. Once a day mix for 3 days. On the fourth day mix again and shape into 5 rolls. Lay on the broiler rack and bake at 140-150 degrees for at least 8 hours.

Serves 25.

PS. The Tender-Quick salt is like a curing salt, can be found at a feed and grain store if not in a regular grocery. Also most ovens do not register 140 degrees but the warm setting can be used and baked overnight or all day, as you prefer.
