FRUITY CITRUS SLUSH 
1 ripe medium banana, cut up
2 cups unsweetened pineapple juice
1/2 cup sugar
1 6 oz. can frozen orange juice concentrate
1 1/2 cups water
1 tbsp. lemon juice
3 cups carbonated water, ginger ale or Sprite
Fresh raspberries, optional
Sprig of mint, optional

In a blender combine banana, pineapple juice, sugar, and orange juice concentrate. Cover and blend until smooth. Pour into large freezer containers. Stir in the 1 1/2 cups water and lemon juice. Apply seal and freeze for six hours or until firm.

To serve, let mixture stand at room temperature for about 30 minutes. To form a slush, scrape a large spoon across the frozen mixture. Spoon about one cup of slush into a 14 oz. cup, then slowly add about 1/2 cup of carbonated water.

Garnish with raspberries and sprig of mint.

Makes six servings.
