WHITE CHOCOLATE CHEESECAKE 
Crust:

1 c. chopped walnuts
1 c. graham cracker crumbs
5 tbsp. melted butter

Mix everything together with a fork. Press in bottom of 10-inch spring-form pan that has been sprayed with Pam.

Filling:

4 (8 oz.) pkg. softened cream cheese
1 c. sugar
4 eggs
1 tsp. vanilla
8 oz. melted white chocolate

Melt white chocolate in microwave per package instructions.

Mix cream cheese and sugar until smooth. Add eggs one at a time. Add melted chocolate and vanilla and blend until creamy and light. Pour over crust in pan.

Bake in 350°F preheated oven for 1 hour or until center is set. Chill overnight. Top with strawberries, raspberries and/or hot fudge.

Since microwave ovens vary in power, you may need to adjust your cooking time.
