MOCK CAESAR SALAD | |
Juice of 1 lemon 3 garlic cloves, crushed 3/4 c. salad oil 1/2 tsp. sugar 1/2 tsp. tarragon 1/4 lb. bacon, diced 1 to 2 heads of romaine lettuce torn in pieces 2 c. cherry tomatoes, halved 2 c. Swiss cheese 1/3 c. freshly grated Parmesan Combine first 3 ingredients, add salt and pepper to taste. Let stand covered in refrigerator for 3 hours. Saute bacon until crisp and drain. In salad bowl, combine the remaining ingredients and toss with dressing. |
