CORN FRITTERS 
2 doz. lg. ears of fresh corn, grated
1/2 c. sugar
1 tsp. salt
1/2 c. flour
3/4 tsp. baking powder
3 eggs

Mix all ingredients and fry on griddle as pancakes. Serve plain or with maple syrup.

These fritters are largely fresh corn, with only enough ingredients to hold the shape.
