LEMON POUND CAKE | |
1 c. butter 1/2 c. soft shortening 2 c. sugar 1 c. eggs (almost 5) 1/4 tsp. salt 1 tsp. vanilla extract 1 tsp. lemon extract 3 c. sifted all-purpose flour TOPPING OR GLAZE: 7 oz. lemon flavored carbonated beverage Confectioners' sugar Heat oven to 325 degrees (moderately low). Grease a 9 3/4 inch tube cake pan. Work butter and shortening together in large bowl of electric mixer until creamy. Gradually add sugar and beat until fluffy. Add eggs and beat at medium speed until well blended. Add salt, vanilla and lemon extracts. Gradually add flour alternately, beating well after each addition. Pour into prepared pan. Bake 80-85 minutes before removing from pan. Carefully cut around edge of pan and tube with a thin spatula. Cool and sprinkle top with sifted confectioners' sugar. Serves 10-12. |
