BRITTANY'S RICE SURPRISE 
1 c. brown rice, cooked
1 medium apple
1/4 c. chopped walnuts
1/4 c. chopped dates
1 stalk celery
1 (8 oz.) container lowfat yogurt, any flavor (I like strawberry-banana)

Cook rice using package directions; rinse and let cool. Chop all ingredients and add to rice. Add 1 container any flavor yogurt and mix well.

Use as a main course if you're health conscious or as a side dish.

Low in fat, sodium and cholesterol.
