4 1/2 to 5 lbs. pears 1/2 c. fresh lemon juice 1 c. honey 3 tsp. cloves 2 tsp. cinnamon 1/2 tsp. nutmeg Wash and core, but do not peel. Cut into small chunks and put them into a large pot. Cook uncovered, over medium heat until most of liquid is gone and the mixture is thickened, then reduce heat and cook, stirring frequently until thick about 2 hours. After about 1/2 hour of cooking, take a potato masher and mash pears in pot. |
