RICE BALLS 
1 c. short grain rice
1/2 cube butter
1/4 c. grated Romano cheese
1 egg, separated
1 egg
Flour
Bread crumbs
Salt to taste
Mozzarella, cut in sm. cubes
Oil for frying

Bring 3 cups water to a boil. Add salt to taste. Add rice; cook until softened. Drain well, don't rinse. Place in a bowl; add butter (melted). Add cheese and 1 egg yolk. Mix well. Store in refrigerator, uncovered, and cool. When ready to fry, form into balls the size of golf balls. Place a piece of Mozzarella in center of each ball. Seal well. Roll in flour. Beat lightly 1 egg and egg white from 1st egg. Roll in egg and then roll in bread crumbs. Fry in deep oil until golden brown. Drain on brown paper. Eat while still hot. Makes 15-16.
